Job Description
Omni Interlocken is seeking an innovative and experienced Director of Food and Beverage to join our team as we begin our exciting hotel renovation and reimagination of our Food and Beverage Outlets.
This role will be at the forefront of building an award-winning food and beverage program that gives our guests one-of-a-kind experiences. Working closely with the Director of Culinary and Director of Banquets, we expect that our chosen individual will be instrumental in establishing the best culinary, banquet, and restaurant teams in the area. As a hotel, we are focused on creating memorable and exceptional guest experiences served up with authentic local flavor.
The Director of F&B will lead all departments within food and beverage in accordance with Omni standards. Our chosen candidate must have outstanding verbal and written communication skills and possess the ability to train, develop, and motivate associates at all levels. The Director of Food & Beverage will oversee and direct the operation of the Banquet functions, Culinary and Food & Beverage Outlets/Restaurant Facilities. Salary range for this position (based on experience): $130,000 – $140,000/year. Full Time Associates at Omni Interlocken Resort are entitled to elect the following benefits: Medical, Dental, Vision and other healthcare benefits, Paid Maternity Leave, 401k and Paid Time Off Accrual. Omni Interlocken Resort reserves the right to pay more or less than listed compensation scale based on factors not related to sex or race. This position is eligible for potential bonus based on performance of job responsibilities.
Responsibilities
- Lead the culinary, banquet, and restaurant functions of the hotel, while creating one-of-a-kind experiences for all customers and guests.
- Partner with the Executive Chef, Director of Banquets, and outlet leaders to create new and attractive menu items designed to represent current culinary trends that consistently exceed customer expectations.
- Continuously evaluate the performance of the food and beverage team. Plan and coordinate training and development opportunities to ensure succession planning within the department and division.
- Physically inspect all food and beverage operations on a regular basis, make recommendations to department heads for areas of improvement, and follow through on areas of concern.
- Develop monthly forecast and annual budget; coordinate effective control of food and beverage costs, payroll, and direct expenses.
- Ensure that sanitation standards are met (Corporate Standards and Local Health Code Requirements).
- Know and adhere to all federal and state liquor liability laws.
- Lead regular department meetings to encourage and promote communication and consistency in service.
- Relay information about upcoming events to all culinary and food and beverage staff.
- Relay, promote, and enforce company policies and procedures to staff under his/her supervision.
- Supply information about department capabilities and programs to other departments and clients or potential clients to ensure consistency in service standards.
- Respond to needs, requests, and escalations of customers, guests, potential guests, and internal associates.
- Ensure that implementation and maintenance of standards of food, beverage and service quality are commensurate with a first-class hotel.
- Develop workable systems for inventory, receiving and product utilization.
- Create a comfortable atmosphere that builds culture and promotes communication to encourage committed and loyal employees.
- Oversee hiring and training programs for food and beverage personnel.
- Responsible for corrective action regarding unsatisfactory performance throughout the department.
- Respond to any reasonable task as assigned by the General Manager and serve as an important part of the hotel’s executive committee.
- Drive and inspire the Omni Culture through leadership and daily associate engagement.
Qualifications
- 3+ years of experience as a food and beverage director or equivalent in an upscale or luxury hotel.
- Bachelor’s degree in hospitality management or culinary training preferred.
- Must have a proven track record of motivating managers and associates to meet and exceed goals and to provide the highest quality experience for our guests.
- Strong understanding of forecasting, budgeting, scheduling, checkbook management, productivity, inventory controls, P&L analysis, and food and beverage cost controls.
- Strong computer and technical skills, including Micros and Birchstreet preferred.
- Ability to track and analyze department turnover trends with demonstrated ability to identify and implement corrective action steps if necessary.
- Proven ability to lead and develop associates at all levels, including mentorship and disciplinary actions when necessary.
- Demonstrated ability to work with sales and catering leadership to ensure proper execution of events.
- This individual must be willing to work flexible hours as needed during busy times and high-profile events.
- Candidate must have extensive hands-on food and beverage knowledge including experience managing multiple outlets and banquets.
- Ability to work in a variety of settings, including sedentary seated computer work, standing for periods of time, and walking the property, and occasionally conducting work that includes lifting and moving objects of up to 50 pounds.
