Associate Executive Chef – Memorial Union

The Associate Executive Chef is responsible for the overall culinary performance of the Memorial Union Building. This position will lead a team of Food Service Assistant Managers, Food Service Supervisors, Chefs, Cooks, and student staff to meet the demands of this large-scale food operation. The goals of the program are to produce safe and high-quality food in a timely manner for distribution to front of house locations, as well as relevant menu and concept development for all units under this position’s purview. Superior communication skills, the ability to promote a positive working environment, and a willingness to work with a diverse and inclusive team are essential to success. Effective leadership is required to ensure the high levels of teamwork, customer service, safety, efficiency, and quality product expected from this unit.
Responsibilities: Provides direction for food service operations by planning and organizing daily operations, department finances, sourcing, quality control, staff, and menu development to ensure customer satisfaction.

  • 20% Assists in the development and implementation of unit focused strategic planning initiatives and programs to ensure appropriate use of resources and exceptional customer satisfaction
  • 15% Assists in the development of unit focused operating policies and procedures to ensure adherence to production, safe food quality, handling, and sanitation processes and procedures
  • 15% Directs the development of food menus, inventory purchases, and forecasting
  • 15% Monitors contracts and liaises with vendors regarding product purchases and contract compliance
  • 15% Exercises supervisory authority, including hiring, transferring, suspending, promoting, managing conduct and performance, discharging, assigning, rewarding, disciplining, and/or approving hours worked of at least 2.0 full-time equivalent (FTE) employees
  • 5% Monitors and maintains technology systems to support the needs of various working units
  • 15% Directs and ensures organizational change according to business needs including positive culture change, enforcement of standards and development of systems and ensuring roles, responsibilities, and reporting structures.

Bachelor’s Degree
We are mostly interested in your learned experience, however a Bachelor’s Degree, Culinary Degree or other formal training will complement your base of knowledge.
Qualifications:
Required
*3 or more years progressive experience in culinary or food and beverage management.
*Experience in medium to high volume food production.
*Demonstrated experience implementing change in an organization, specifically the growth and development of a team mindset along with a positive culture change.

It is anticipated this position requires work be performed in-person, onsite, at a designated campus work location.

Work Schedule:
The work week will be approximately 45 hours with some weeks exceeding this based on business needs. Food production occurs 7 days a week with kitchen operations running from early morning until late in the evening. You’ll be the leader of the area, and you’ll be expected to flex your schedule as needed to meet the needs of the operation. Core hours for the position during the academic year will be 7am to 4pm M-F as well as special event weekends like Commencement, Labor Day, and Badger Home Football Games. During the summer the schedule may shift to include Saturdays to cover business needs. This position will be based in Memorial Union, but occasionally flex to our other buildings for coverage as needed.

Additional Information:
The Wisconsin Union operates from several buildings on the UW-Madison campus including Memorial Union, Union South, Fluno Center, Pyle Center, University Club, Red Gym, and the Student Activity Center. The Wisconsin Union is a financially self-supporting division of the University of Wisconsin-Madison. Financial support for the organization is provided by income earned by over thirty food service units and a variety of nonfood units such as games, guest rooms, space rentals and campus vending. Substantial support is also provided by student fees. The total annual organizational budget is approximately $60 million dollars.
