Job Type: Full-time

Starting Pay: $22.25 per hour plus potential increase after 90 Days

Shift Premium: $2.00 per hour

Schedule: 4PM-4AM (2-2-3 Rotation Schedule)

Work Location: Plymouth, WI

WORK ENVIRONMENT: warm and humid

  • ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned
    • Sanitizes and sets up cheese make and related equipment.
    • Responsible for daily start-up of cheese make process and operating cheese make vats and related equipment.
    • Prepares piping for milk silos and documents silo activity.
    • Operates HTST Pasteurizer according to regulatory standards and plant work instructions.
    • Operates a Milk Separator to control standardization of pasteurized milk.
    • Operates cream pump and cooler to ensure a quality sweet cream product.
    • Operates milk and cheese testing equipment, including, but not limited to, a Milko-Scan, Food Scan and pH meter to ensure product is within specifications.
    • Operates a multi-tank CIP system.
    • Operates cheese make vats and related equipment, including panel view type computer controls.
    • Ensures proper set-up of starter lines. Also responsible for CIP of starter tanks as needed.
    • Responsible for following all cheese make related procedures, including but not limited to; controlling set temperature, set times, cutting the curd, cook temperatures, cook times, ingredient addition and lot tracking.
    • Performs pre-operation inspection of vats, tables, and other cheese make equipment prior to cheese make processes and taking proper corrective action.
    • Monitors cheese make processes and performs adjustments for variations in milk supply, starter activity, mechanical breakdowns and other production considerations.
    • Anticipate needs, organizes duties, troubleshoots and problem solves.
    • Monitors and analyzes cheese and milk chemistry results and works with supervision to make adjustments to the cheese make process in order to keep cheese make within specifications.
    • Communicates production issues with all factory personnel including co-workers, supervisors and maintenance to make sure all phases of the cheese make process are properly completed.
    • Records the cheese make data using a computerized data collection device, written documentation and circle chart recorders.
    • Coordinates the repair and maintenance of cheese make equipment with supervision and maintenance department when necessary.
    • Anticipates needs, organizes duties, troubleshoots, and problem solves.
    • Performs set-up and maintenance on Milko Scan according to company procedures.
    • Assists table operator in moving table equipment, set-up, and stocking of cheese throughout the shift.

    • Complies with all company Safety, HACCP and GMP policies

    • Immediately reports any food safety or quality issues to management or other individual authorized to initiate action.

    NON ESSENTIAL DUTIES

    • May be required to contact replacement personnel if needed.
    • Cross-trained in Starter Operations.

    EDUCATION and/or EXPERIENCE

    High school diploma or equivalency is required (GED)

    1-3 years cheese making experience or 3-5 years food manufacturing experience desirable

    OTHER KNOWLEDGE, SKILLS, AND ABILITIES

    • Knowledge of operator interfaces to operate automated equipment
    • Good computer and mechanical skills
    • Ability to read and interpret documents, including but not limited to; safety rules, operation and maintenance instructions, batch tickets, recording charts, equipment readouts, and procedural manuals.
    • Ability to write routine reports and correspondences.
    • Ability to speak effectively before individual Team Members or departments.
    • Ability to add, subtract, multiply and divide in units of measure such as pounds, ounces, gallons and inches, using whole numbers, common fractions and decimals. Ability to compute rate and percent and to interpret recorded chart graphs.

    • Ability to apply common sense understanding to carry out instructions furnished in written, oral or diagram form. Must have the ability to reason and make decisions based on knowledge and experience concerning equipment malfunctions and cheese make related issues.

    • Ability to understand complex processes and process piping.
    • Must be punctual and dependable.
