Chef de Cuisine

Santa Monica Proper Hotel is seeking a Chef de Cuisine. A seamless merger of historic retrofit and new construction, our 271-room property features interior design by international style icon Kelly Wearstler, multiple dining options by local area culinary stars, a rooftop lounge and swimming pool, and 24,000 square feet of meeting and event space.

Job Overview

  • Oversee the culinary operations and management of a culinary staff and heart-of-the-house employees
  • Provide guidance and direction for all day-to-day operations
  • Directly oversee the hiring, training, coaching, development and discipline for culinary staff
  • Plan and manage the procurement, production, preparation, and presentation of all food in a safe, sanitary and cost-effective manner
  • Ensure compliance with food handlers and sanitation standards
  • Maintain complete knowledge of and comply with all departmental policies, procedures, and brand standards
  • Complete daily, weekly, and monthly management administrative duties including operations reports, financial documentation, human resources/staff management paperwork, standard operating procedures, safety and sanitations checklists, and ordering and inventory documentation

Qualifications

  • 3 years’ experience in a similar position in a fast-paced environment
  • Strong leadership skills to manage and motivate our Culinary team
  • Excellent organizational and planning skills
  • Excellent communication skills
  • ServSafe and TIPS Required

Education: Culinary Degree or Equivalent Training
