Under the supervision of the Food and Beverage Director,the Chef Supervisor is responsible for the preparation and oversight of allfood items consumed by residents, guests, and personnel. Supervises andinstructs kitchen workers concerned with food preparation, and service.Maintains very high standards of sanitation, food quality, and portion controlby the use of standardized recipes and utilization of correct tools andequipment. Ensures that correct cooking methods are applied to all foodproducts using classic preparation methods as the standard. Prepares all mealsin an efficient manner by utilizing BOH tools and production schedulesdeveloped jointly with the Food and Beverage Director. Utilizes trainingprograms for all new personnel before any production tasks are given to newemployees. Assists in monitoring and controlling resources and costs for allaccounts concerned with raw food, supplies, and labor.
Essential Job Duties:
- Holds production meetings with culinary staff, explaining in detail the preparation method of each menu item, quantity, and the expectation of the completed item. Utilizes the comment cards generated by the FOH to adjust menu items (same day if necessary) to satisfy resident expectations.
- Supervises and assists in scheduling appropriate kitchen personnel and recommending disciplinary action when necessary. Ensures that staff is in compliance with all Christwood Dining and Community policies, procedures and protocol.
- Work with the Food and Beverage Director, BOH Leads to hold a chef meeting for the service staff before each meal to discuss the menu, cooking methods and any other items of importance. Samples of new items should be prepared for tasting when possible.
- Ensures that the proper amount of entrees, vegetables, desserts, soups, sauces, and salads are prepared in accordance with standardized recipes, preparation methods, portion control, time schedule, sanitation standard, cost constraints and special dietary needs.
- Utilizes excess product in a creative and appealing manner. Creates specials that utilize regional and seasonal products.
- Smells and tastes all food to ensure the quality and palatability meet or exceed the very high standards of Christwood.
- Works with the Food and Beverage Director to contribute to the planning, scheduling, and presentation of all in-services.
- Works with the CDM, FOH Supervisor(s), and BOH Shift Lead(s) in maintaining a high-quality food service program for all residents and guests in the Independent Living and Health Center dining rooms. Assists in monitoring and logging of food temperature and cooler temperatures. Works with the BOH Dish Lead to monitor the logging of the dish machine temperature and sanitizer log.
- Assures efficiency of food preparation and serving; compliance with local, state, and federal standards; sanitation, hygiene, and health standards of personnel as set forth by the Louisiana Department of Health and Center for Medicare Service’s Joint Commission.
- Delegates duties to subordinates as needed in order to be efficient and to allow other staff to grow. Maintains a positive work environment that fosters a desire among staff to serve the residents to the best of their ability.
- Must ensure that Kitchen is cleaned daily and kept clean during production. Reports any equipment repairs or maintenance needs to Food and Beverage Director or to the Maintenance Director. Maintains good working relations with employees, residents, and guests; illustrates leadership to promote unity of effort, group pride, harmony and teamwork.
- Performs specific work duties and responsibilities as assigned by the Food and Beverage Director.

QUALIFICATIONS
- High School graduate required. College degree preferred.
- A minimum of three years’ experience in the administration of food services systems.
- Ability to communicate with, understand, empathize with and be tolerant of residents, patients, visitors, peers, subordinates, supervisors, and outside contacts.
- Current ServSafe Food Manager Certification
