General Description
The Director of Food and Nutrition Services is responsible for the overall leadership of all Community Kitchen functions in support of the San Antonio Food Bank’s mission, vision, and strategic goals. This position trains, coaches, and manages kitchen personnel and supervises/coordinates all related culinary activities; directly supervising the Sous Chefs who have the responsibility for hiring, discipline, performance reviews and initiating pay increases; ensures alignment of all systems to support the business of the department considering business trends, while focusing on people, services, and financial stewardship.
The Director of Food and Nutrition Services establishes effective working relationships with all constituencies including clients, volunteers, trustees, leadership, vendors, board members, and employees; estimates food consumption and requisitions or purchases food; selects and develops recipes; standardizes production recipes to ensure consistent quality; establishes presentation techniques and quality standards; plans and prices menus; ensures proper equipment operation/maintenance; and ensures proper safety and sanitation in kitchen; and may also offer culinary instruction and/or demonstrate culinary techniques.
Essential Functions
- Manage production of daily meals for clients following all USDA and TDA program guidelines for components, nutrition content, and portion sizes.
- Manage maintenance and repair of kitchen facility and all kitchen equipment, procuring repair services as needed.
- Work with the Menu Planner, Children’s Program Manager, and Food Resourcing to procure food that meets program guidelines.
- Maintain clean, safe, and organized work environment.
- Develops and oversees an inventory control program of specific product lines (chemicals, food, etc.) placing orders and supervising check-in to assure accuracy. Maintains documentation, follows FIFO, and reducing waste.
- Stay abreast of business trends in food banking and government food programs.
- Supervise and coach employees, trainees, and volunteers.
- Work with the Culinary Trainer to execute the Culinary Program curriculum including weekly exams.
- Supervise, demonstrate, and educate on professional culinary techniques and methods.
- Conduct training sessions/classes with trainees in culinary methods, sanitation, and safety.
- Work with nutritionists to bring in guest chefs for training.
- Maintain meal, program files, and other documentation as necessary in computer and hard copy formats.
- Research, evaluate, implement, and track effectiveness of new SAFB program initiatives.
- Work closely with the Nutrition Advisory Committee for recommendations and support.
Qualifications
- Bachelor’s degree in food and nutrition, Food Service Management, Business, or related field
- Three to five years’ experience in food service administration including purchasing, warehousing, and supervising employees.
- Two years’ experience in training and management.
- Food Safety Manager certification required.
- Ability to compile and analyze data and create reporting for leadership.
- Demonstrated communications skills, both written and verbal, including the ability for effective public speaking.
- Ability to manage time efficiently and to work independently with minimum supervision.
- Ability to work cooperatively with other staff, volunteers, and agency personnel.
- Demonstrated orientation to detail, accuracy, and the meeting of deadlines.
- Demonstrated professional judgment and discretion.
- Ability to represent the Food Bank in a courteous professional manner.
- Possession of a current Texas driver’s license, liability insurance and a clean driving record.
- Access to reliable transportation.

While performing the duties of this job, the employee is constantly required to move about inside an office and kitchen environment. They will constantly observe and communicate with employees and non-staff, judge and estimate food purchases and consumption, determine, identify, and recognize equipment maintenance and sanitation standards, remain in a stationary position, standing or sitting. They will constantly operate a computer and other office and kitchen equipment. They will occasionally position themself to stoop, kneel, or crouch. The employee must occasionally lift, and/or move up to 25 pounds.
Work Environment
This job is performed in an indoor office and indoor kitchen environment and occasionally may require attendance at outdoor events. You may be required to drive to different locations with varying conditions. The noise level in the work environment is usually moderate.
