Summary:
The Lead Chef-Assistant Manager is responsible for the same duties as the Culinary Arts Manager in their absence to include planning and preparation of meals, maintenance of kitchen facilities and equipment, and for ensuring compliance with all USDA and health department requirements. In addition, the Assistant is directly responsible for ordering, inventory control and ensuring that meal counts are accurate and accountable.
Supervisory Responsibilities:
• *This position is responsible for the recruitment, hiring, and training of staff under their supervision.
Position Responsibilities:
- *Responsible for the supervision and training of the San Pasqual’s Program staff.
- *The Food Services Supervisor is responsible for planning and preparing meals for the children, and staff according to the USDA and other regulatory guidelines
- *Responsible for ensuring the maintenance and cleaning of all kitchen facilities, equipment and tools.
- *Responsible for ensuring all health department and USDA and other regulatory requirements are followed.
- *Responsible for maintaining safe working conditions and procedures for all food service staff.
- *Responsible for ordering all the food and supplies for the kitchen.
- *Supervises the planning of special events involving meals.
- Assist with recruitment of candidates for the training program.
- Conduct interviews and relay feedback regarding potential candidates for San Pasquale Program.
- Develop internship sites, culinary chef mentors and employment-partnerships prior to and during job search.
- Maintain all required databases for accurate meal count, nutritional information and clients served
- Other duties as assigned by Vice President of Programs and Culinary Arts Manager

Requirements
Minimum Qualifications:
- Education
- High School Diploma(or Equivalent) is required, Bachelors preferred. .
- Experience
- Minimum of 5 years’ experience in Cooking with at least 3 years of supervisory experience.
- License and Credentials
- Texas Food Handlers Certification (or be willing to obtain within the first 30 days of being hired).
- Texas Food Safety Managers Certification (or be willing to obtain within the first 30 days of being hired).
- Reliable transportation
- Valid driver license
- Valid vehicle insurance
- Bilingual in English and Spanish is preferred
Minimum Knowledge and Skills:
- Minimum of 5 years’ experience in Food and Beverage including cooking, prepping, ordering, and inventory control;
- Extensive working knowledge of determining, and costing out catered events and menus;
- Experience with general computer software, Microsoft Word & Excel;
- A solid grasp of food safety;
- Must be detail oriented, organized, self-motivated, work well independently and on a team;
- Must have good written and verbal skills;
- Must have good critical thinking and problem solving skills.
Travel Requirements:
Travel requirements for the position include – occasional local travel with a maximum of 1 overnight stay.
