Description
Position Purpose:
The Lead Cook is responsible for leading the day-to-day culinary operations of high-quality food and service standards to students, staff, faculty, and guests, including special events and conferences. This role will assist in aligning all Charis Kitchen personnel with the vision and mission of Charis Bible College in their front-facing and back-end operations of cleanliness, hospitality, and world-class service and food production.
Essential Duties:
- Lead team of Kitchen staff in supervising all food preparation and presentation activities, ensuring that high standards of hygiene and cleanliness are continually maintained.
- Supervise the effective training and oversight of Cooks and Prep Cooks for preparing entrées, advising on suitable portion sizes, and ensuring that food items are stored at the appropriate temperatures.
- Maintain a welcoming and exciting culinary experience for students, staff, faculty, and guests that enter the Charis Kitchen for high-quality meals and service.
- Effectively train Cooks and Prep Cooks to ensure that all Kitchen policies and procedures are being followed, resulting in advanced alignment with hygiene standards, as well as always presenting extemporary food and service from the Kitchen.
- Create and implement Standard Operating Procedures for preparing meal ingredients, including washing, peeling, cutting, and slicing fruit and vegetables, as well as marinating meats.
- Create and implement Standard Operating Procedures for adequately stocked cooking stations and pantries with the necessary meal ingredients and cooking equipment for each successful day ahead.
- Create and implement Standard Operating Procedures for ensuring that all cooking stations and kitchen surfaces are disinfected before and after each shift.
- Create and implement Standard Operating Procedures for inventory checks and quality control.
- Adhere to standard food rotation practices to reduce food waste and minimize the risk of contamination.
- Assess the quality of delivered food supplies to ensure that it meets Charis Kitchen standards, communicating with the Kitchen Supervisor if standards are not met to deliver high-quality meals to students, staff, faculty, and guests.
- Scale recipes to meet the needs of various conference and events capacities.
- Supervise the workflow of the Kitchen staff, ensuring that all given tasks are being completed in a timely manner.
- Maintain the regular, daily schedules of Charis Kitchen personnel, as well as evaluate and strategize the hours needed from staff during conferences and events to limit overtime if not necessary or approved.
Qualifications
Knowledge, Skills, and Abilities:
- Clear and concise written and verbal communication.
- Creative problem-solving, and time management, with a high level of organization.
- Proven leadership abilities in a fast-paced environment.
- High degree of flexibility and adaptability. Must be able to manage multiple projects and work well under pressure.
- Ability to scale recipes to meet the needs of various conference and events capacities.
- Excellent safety and sanitation skills.
Requirements:
- Must have a personal relationship with Jesus Christ.
- Must sign the Statement of Faith.
- High School Diploma or equivalent education is required.
- Ability to work mornings, nights, and weekends, as needed, for conferences and events.
- Charis Bible College student or graduate is preferred.
- Must pass all required checks.
Experience:
- A minimum of 3 years of professional kitchen experience or relevant experience is required.
- Must have a current health certificate or work towards receiving one immediately.
- Compensation is commensurate with experience.
