About This Position
The PM Kitchen Supervisor is responsible for ensuring smooth and safe operations of the Main Kitchen during assigned shifts. Primary duties include working closely with Culinary Team to ensure menu standards are upheld, and ensure the Kitchen is setup for success. Primary responsibilities of the Kitchen Supervisor include
- Coordinate activities of cooks and workers engaged in food preparation
- Work with prep team to ensure proper prep and pars for all F&B outlets, including Family Meal
- Collaborate with Chef Team to plan and develop recipes and menus, considering such factors as seasonal availability of ingredients and the likely number of customers
- Check the quality of raw and cooked food products to ensure that standards are met
- Coordinate the proper receiving of all products delivered on the morning shift (such as checking the quantity and quality of received products; ensure feedback to the vendors and effective recording of variances; etc.)
- Consolidate and organize the walk-in freezer and dry storage spaces daily
- Inspect supplies, equipment, and work areas to ensure conformance to established standards
- Record production and operational data on specified forms
- Ensure the day runs correctly by communicating with associates, other supervisory personnel and chefs; includes communication to following shifts
- Perform other duties as required and assigned
As a supervisor, you will…
- Supervise Culinary Team, and provides floor-coverage, in the absence of Chef Team
- Communicate and collaborate with the Chef Team regarding any performance issue encountered with Culinary Team and discipline provided
- Coach and counsel Culinary Team, with proper approvals, when necessary
- Supervise Kitchen and Patio cooks during designated shifts, delegate breaks and meal periods as required
- Coach Culinary Team members to excel in their culinary habits. Continually model excellent culinary skills and sanitation practices
- Support hiring process as needed
- Ensure all interactions with and between coworkers are conducted in a highly professional and efficient manner
- Ensure a safe working environment and attitude on the part of all employees in areas of responsibility
Requirements
Qualifications
- 3-5 years of fine dining cooking experience ( required )
- 2+ years of high-volume cooking experience ( required )
- 5+ years of culinary experience ( required )
- 2+ years of management experience in a professional Kitchen environment ( required )
- High-level seafood skills ( required )
- Ability to work evening schedule, approximately 3pm-12am five days per week ( required )
- Washington State Food Hander’s Card, or the ability to obtain one within 2 weeks of employment ( required )
- Culinary Arts degree ( preferred )

- Knowledge of Work : Excellent attention to detail and work standards; strives to continually improve skills and knowledge necessary to complete job responsibilities; skillfully uses utensils and equipment needed for the position; accurately completes forms, waste logs, productions sheets, etc.; measures, portions or otherwise prepares beverages and food with great precision and efficiency. Competent in use of a computer. Able to learn/navigate various software applications. Competent in the use of Microsoft Office 365 product suite.
- Interpersonal : Demonstrates flexibility and a willingness to accept change, new procedures and constructive comments; ability to work/communicate effectively verbally with multiple operating departments. Able to speak, read, and write English.
- Work habits : Ability to work independently, autonomously and without supervision, while also able to follow written and verbal instructions when necessary. Able to work long hours and overtime if necessary. Team-oriented. Able to cope with varied and fast-paced activities; meets sanitation, food handling, quality and presentation standards. Coordinates multiple tasks and meets production and service time schedules; follows instructions and recipes as needed.

- Work Environment : Conditions are those of a typical of a kitchen/banquet environment. Position may experience a moderate to high level of noise as well as heat. Often exposed to hot surfaces and open flame.
- Physical Demands : Individuals in this position must be able to able to lift and move objects up to 50 pounds. Work may require frequent bending, lifting, a wide range of arm movement, finger and hand dexterity, and may occasionally require long hours standing. Visual identification of equipment, supplies, and work conditions as necessary.
