Job Summary

This position, under general supervision of the Foreign Trade Zone Manager, is responsible primarily for the support of the Executive Chef at the Solomon P. Ortiz International Center. The Culinary Intern will gain hands-on experience in recipe formulations, menu development, and daily kitchen operations.

Essential Functions:

  • Supporting Executive and Sous Chefs
  • Implementing food safety procedures
  • Developing recipes and menus
  • Maintaining clean workstations
  • Preparing a wide variety of foods
  • Participating in banquet event order meetings

Other:

  • Adheres to Port policy and maintains good employee relations
  • Completes assigned tasks and works required hours/shifts to fulfill Port objectives
  • Performs other related duties as assigned

Additional Physical Factors:

While performing duties, employee is regularly required to stand, speak, or hear, use hand finger movements, use commercial food service equipment; frequently required to stand, walk, reach stoop, kneel and lift and/or move items weighing up to 40 pounds.

Environmental Factors:

General commercial kitchen environment; exposure to wet floors, heat, and high humidity; occasional exposure to loud noise.

Minimum Qualifications:

This is an internship position. Candidates shall be attending an accredited college or university with a major in culinary arts; demonstrated written and oral proficiency in the English language. The ideal candidate will possess strong cooking knowledge, organizational, and time management skills; stamina; strict adherence to food safety standards, teamwork, the ability to work in a fast-paced environment, and to operate a personal computer and a variety of programs, office equipment, and internet. Must deal effectively with the public and varying levels of management.
