Senior Director of Food & Beverage

About the Opportunity:

The Senior Director of Food & Beverage is responsible for oversight and management of all aspects of onboard food and beverage production including, but not limited to: budget, sourcing, specifications, item master, negotiating, logistics, storing schedule, and storage, inventory and cost control as well as menu design and production and delivery systems. This position also assumes responsibility, in conjunction with the Hotel Director (HD) and Vessel Food & Beverage Director/Manager, for rationale, coordinated delivery and removal of food and service ware in dining areas (aka Dining Service) to guest tables while maintaining service standards, cleanliness and appealing presentation in all aspects, coordinated production, delivery and removal of beverages to guests in service areas (aka Beverage Service) while maintaining service standards, cleanliness and appealing presentation in all aspects.

Essential Duties & Responsibilities:

  • All menu design, item/product selection, procurement and proper storage.
  • Recipe selection, content and procedural development including concepts and long-range continual improvement.
  • Assist with all galley equipment selection, purchase, installation, training and maintenance.
  • Assist with all beverage and dining equipment selection, purchase, installation, and maintenance.
  • Be active in Research and Development, attend trade shows and virtual shows as needed.
  • Provide assurance that all applicable sanitary and hygienic standards are fully understood and met; including but not limited to USPH, FDA, CDC, & COVID-19 protocols.
  • Assure appropriate training courses and materials for the above, including administration of Food Handler/ServSafe, and ABC training, etc.
  • Provide food production staff with clear avenues to advancement including well-defined qualifications and standards, a mentoring/teaching/coaching program, and regular feedback.
  • Interviewing of all Executive Chef or leadership level galley personnel.
  • Participate, in conjunction with Human Resources and the HD, the interviewing and hiring decisions for Food & Beverage Leaders, Culinary Leaders, Head Waiters and like positions.
  • Review Vessel Ops Staff Reviews (F&B, Hotel Director) to identify star employees and areas of improvement.
  • Make regular visits to vessels as needed to support, implement and verify Food & Beverage Service, Crew Dining, report on culture, adherence to standards, continual improvement, and areas of opportunity.
  • Ensure the continual upkeep of culinary photos and recipe development is in process.
  • Assist with Product Development and Marketing on material development and approval.
  • Wine and “Free Pour”, Spirits, Beer/Other selections, mix, and sourcing.Approve/Create and manage Bar, Dining Room beverage and cocktail menus, special function menus, room service and crew menus.
  • Oversight of Galley MXP Menu Management, Waiter Order, Recipe, Storing Schedule.
  • Assist with Guest Survey Questionnaire and Use the Feedback/Scores as well as P&L, and other reports from AQV corporate ensure the following:
    • Maintain or exceed minimum acceptable score for any food or service category as mutually agreed upon with upper management.
  • Manage and track all departmental costs to consistently track benchmark PPD and gross numbers.
  • Develop a galley and service culture where we have the very best employees and turnover is not a result of deficient management style or ability.
  • Ensure behavior and performance supports the company’s mission, vision, values and operating principles
  • Solicits feedback; takes action to continuously improve success of team
  • Perform other duties as assigned

Requirements & Qualifications:

Education:

  • HS Diploma or Equivalent Required
  • Bachelor’s degree in culinary field required
  • Professional Certification(s) or License

Skills & Abilities:

  • Advanced knowledge of USCG, FDA, USPH and other applicable regulations and requirements
  • Computer literacy in conjunction with administrative skills
  • Ability to use independent judgment and discretion to develop and execute innovative solutions to operational problems
  • Possess and demonstrate good judgment, analytical ability, performance under pressure
  • Communicate clearly and effectively both orally and in writing
  • Logically and independently plan, organize, and complete work assignments
  • Demonstrate well-developed interpersonal skills
  • Set and achieve high standards of performance
  • Demonstrate initiative and be able to make progress on multiple assignments under time constraints

Experience:

  • Ten plus years of experience in a full service operation required
  • Experience in supervision & training of employees
  • Cruise industry experience preferred

Other:

  • Must be at least 21 years of age.
  • Submit to and pass alcohol and drug tests including but not limited to pre-employment, random, reasonable suspicion and post-accident/incident testing.
  • Travel is expected of this position.
  • Compensation is roughly $125k based upon knowledge and experience.
